Mexican Corn Salad

A vibrant and refreshing Mexican corn salad, perfect as a side dish or light meal. Sweet corn kernels are tossed with black beans, red onion, bell pepper, cilantro, and a zesty lime dressing.

  • 2 cups fresh corn kernels from about 2 ears of corn
  • 1 can black beans, rinsed and drained (15 ounces)
  • 1 small red onion, finely chopped
  • 1 bell pepper (any color), chopped
  • 1 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large bowl, combine the corn, black beans, red onion, bell pepper, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the corn mixture and toss to combine.
  • Serve immediately or chill for later.

Notes

For extra flavor, add a diced jalapeño or a pinch of chili powder.
