  • 15 oz mandarin oranges drained
  • 0.5 cup sliced almonds toasted
  • 0.5 cup red onion thinly sliced
  • 0.5 cup celery chopped
  • 1 cup shredded coconut sweetened, optional

Dressing Ingredients

  • 0.5 cup mayonnaise
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon honey
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large bowl, combine the drained mandarin oranges, toasted sliced almonds, thinly sliced red onion, and chopped celery.
  • If using, add the sweetened shredded coconut to the bowl.
  • In a separate small bowl, whisk together the mayonnaise, rice wine vinegar, honey, salt, and black pepper until well combined.
  • Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  • Serve immediately or chill for at least 30 minutes to allow the flavors to meld.

Notes

This salad is best served fresh. For a different twist, try adding some chopped walnuts or pecans instead of almonds.
