Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, combine eggs, grated zucchini, lemon zest, and vegetable oil.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
You can add a lemon glaze on top for extra flavor.
