  • 0.5 cup vegetable oil

  • 1 cup lemon juice freshly squeezed
  • 1 cup lemon zest

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, oil, eggs, lemon juice, and lemon zest.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Divide batter evenly between prepared cake pans.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.

Notes

For an extra lemony flavor, add a lemon glaze or frosting to the cake once it has cooled completely.
