Lemon Sugar Cookies

These classic Lemon Sugar Cookies are soft, chewy, and bursting with bright citrus flavor. Perfect for any occasion!

  • 1 cup unsalted butter softened
  • 1.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest from about 2 lemons
  • 3 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Optional Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoon lemon juice

Preparation Steps

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and lemon zest until well combined.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the chilled dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  • Bake for 9-11 minutes, or until the edges are lightly golden brown. The centers should still look soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • For the optional glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.

Notes

Store in an airtight container at room temperature for up to 3 days.
