Instructions
Preparation Steps
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter and mix until the mixture resembles coarse crumbs.
In a separate bowl, combine the beaten egg, heavy cream, and lemon zest.
Stir the wet mixture into the dry ingredients until just combined.
Turn the dough onto a floured surface and gently shape into a disc approximately 1-inch thick.
Cut into 8 wedges and place on the prepared baking sheet.
Bake for 20 minutes or until the tops are golden brown.
Remove from the oven and cool on a wire rack before serving.
Notes
For an extra touch of sweetness, drizzle with lemon glaze before serving.
