These light and fluffy lemon scones are perfect for a refreshing afternoon treat, baked with a hint of lemon zest and topped with a sweet lemon glaze.

  • 2 cups all-purpose flour sifted
  • 0.5 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold, diced
  • 1 large egg beaten
  • 0.75 cup heavy cream
  • 1 tbsp lemon zest freshly grated

Preparation Steps

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold butter and mix until the mixture resembles coarse crumbs.
  • In a separate bowl, combine the beaten egg, heavy cream, and lemon zest.
  • Stir the wet mixture into the dry ingredients until just combined.
  • Turn the dough onto a floured surface and gently shape into a disc approximately 1-inch thick.
  • Cut into 8 wedges and place on the prepared baking sheet.
  • Bake for 20 minutes or until the tops are golden brown.
  • Remove from the oven and cool on a wire rack before serving.

Notes

For an extra touch of sweetness, drizzle with lemon glaze before serving.
