Lemon Potato Salad

A refreshing and tangy potato salad perfect for picnics and barbecues.

  • 1.5 pounds baby potatoes halved
  • 0.25 cup extra-virgin olive oil
  • 0.5 cup lemon juice freshly squeezed
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 0.25 cup fresh parsley chopped
  • to taste salt and pepper

Preparation Steps

  • Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and set aside to cool.
  • In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, and minced garlic.
  • Add the cooled potatoes to the dressing and toss to combine.
  • Garnish with chopped fresh parsley and season with salt and pepper to taste.

Notes

For best results, allow the salad to sit for at least 30 minutes so the flavors can meld.
