Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together olive oil, eggs, lemon juice, and lemon zest.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • Pour batter into the prepared pan and bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before serving.

Notes

This cake is best served at room temperature. You can dust it with powdered sugar or add a lemon glaze for extra flavor.
