Crust Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.5 cup sugar
  • 0.25 cup melted butter

Filling Ingredients

  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 1 tablespoon lemon zest
  • 0.5 cup lemon juice
  • 2 large eggs

Preparation Steps

  • Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter. Press into mini muffin tins.
  • In a separate bowl, beat cream cheese and sugar until smooth. Add lemon zest, lemon juice, and eggs; mix until combined.
  • Pour filling over crusts. Bake for 20-25 minutes, or until set.
  • Let cool completely before serving.

Notes

These cheesecake bites are best served chilled. You can also add a dollop of whipped cream or a fresh berry for garnish.
