Lemon Cake Bars

These zesty lemon cake bars are easy to make and perfect for any occasion. The bright lemon flavor is balanced by a sweet and slightly crumbly base.

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 cup lemon juice freshly squeezed
  • 1 cup lemon zest

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon juice and zest.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour batter into prepared pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before cutting into bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days.
