  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 tablespoon lemon zest freshly grated
  • 1 cup buttermilk
  • 2 cups blueberries fresh

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a Bundt pan.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in lemon zest. Add flour alternately with buttermilk, mixing just until combined.
  • Gently fold in blueberries and pour batter into the prepared Bundt pan.
  • Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes
