Lasagna Soup

A hearty and comforting lasagna soup, perfect for a chilly evening. This recipe combines the flavors of classic lasagna in a quick and easy soup.

  • 1 pound Ground beef Can substitute with Italian sausage
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 28 ounces Crushed tomatoes
  • 15 ounces Tomato sauce
  • 1 cup Beef broth
  • 9 ounces Noodles, broken into thirds
  • 2 cups Ricotta cheese
  • 1 cup Shredded mozzarella cheese
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil

Instructions
 

Preparation Steps

  • Brown ground beef in a large pot over medium heat. Drain excess fat.
  • Add onion and garlic; cook until softened.
  • Stir in crushed tomatoes, tomato sauce, beef broth, oregano, and basil. Bring to a simmer.
  • Add noodles; cook according to package directions, or until tender.
  • Stir in ricotta and mozzarella cheese. Serve hot.

Notes

For a vegetarian option, substitute ground beef with lentils or mushrooms.
