Key Lime Pie Bars

Enjoy a taste of the tropics with these delightful Key Lime Pie Bars. A tangy and sweet lime filling on a buttery graham cracker crust, perfect for any occasion.

Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.375 cups granulated sugar
  • 6 tablespoons unsalted butter, melted

Filling

  • 14 ounces sweetened condensed milk
  • 0.5 cup key lime juice freshly squeezed is best
  • 3 large egg yolks
  • 1 teaspoon lime zest

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until well combined and the crumbs are moistened.

  • Press the crumb mixture evenly into the bottom of the prepared baking pan to form the crust. Bake for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly.
  • While the crust is cooling, prepare the filling. In a large bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth and well combined.

  • Pour the lime filling over the cooled crust, spreading it evenly.
  • Bake for 15-20 minutes, or until the filling is set around the edges but still slightly jiggly in the center. The center will continue to set as it cools.
  • Let the bars cool completely in the pan on a wire rack. Once cooled, cover and refrigerate for at least 2 hours, or until firm.
  • Once chilled, use the parchment paper overhang to lift the bars out of the pan. Cut into 16 bars. Serve with whipped cream and lime slices, if desired.

Notes

For an even tangier flavor, you can add a bit more lime juice, but be mindful of the filling's consistency.
