  • 1.5 cups graham cracker crumbs finely ground
  • 0.5 cup unsalted butter melted
  • 0.25 cup sugar
  • 3 large egg yolks
  • 14 oz sweetened condensed milk
  • 0.5 cup key lime juice freshly squeezed

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar. Press mixture into the prepared baking pan.
  • Bake crust for 10 minutes, then let it cool on a wire rack.
  • In a large bowl, whisk egg yolks and sweetened condensed milk until smooth. Stir in key lime juice.
  • Pour the filling over the cooled crust, and bake for an additional 10 minutes.
  • Let it cool to room temperature, then refrigerate for at least 2 hours before serving.

Notes

For best results, use freshly squeezed key lime juice.
