Key Lime Cake Recipe

A moist and zesty key lime cake with a tangy cream cheese frosting, perfect for any occasion.

  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 0.5 cup buttermilk
  • 0.33 cup key lime juice
  • 1 teaspoon key lime zest

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in buttermilk, key lime juice, and key lime zest.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the batter evenly between the prepared pans.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  • While the cakes cool, prepare the frosting: In a large bowl, beat cream cheese and butter until smooth.
  • Gradually beat in powdered sugar, then stir in key lime juice and zest until well combined.
  • Once cakes are completely cool, frost the cake as desired.

Notes

For an extra zesty flavor, you can add a bit more lime zest to the frosting. Garnish with lime slices for a beautiful presentation.
