  • 2 lbs Yukon Gold Potatoes Peeled and diced
  • 2 cups Leeks White and light green parts only, thinly sliced
  • 6 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 tbsp Butter
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Preparation Steps

  • Melt butter in a large pot over medium heat. Add leeks and cook until softened, about 5 minutes.
  • Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Stir in heavy cream, salt, and pepper. Simmer for 5 more minutes.
  • Serve hot.

Notes

Garnish with fresh chives or a dollop of sour cream before serving.
