Instant Pot Jambalaya

A quick and easy Instant Pot Jambalaya recipe, perfect for a weeknight meal. This flavorful dish is packed with andouille sausage, chicken, shrimp, and rice.

  • 1 lb Andouille sausage sliced
  • 1 lb Chicken breast cubed
  • 1 lb Shrimp peeled and deveined
  • 1 cup Uncooked long-grain rice
  • 1 cup Diced tomatoes
  • 1 cup Chicken broth
  • 1 tsp Cajun seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Set the Instant Pot to sauté mode. Add the sausage and cook until browned.
  • Add the chicken and cook until browned.
  • Stir in the rice, tomatoes, chicken broth, Cajun seasoning, salt, and pepper.
  • Close the lid and set the valve to sealing. Cook on high pressure for 8 minutes.
  • Allow the pressure to release naturally for 10 minutes, then carefully quick release any remaining pressure.
  • Stir in the shrimp and cook until pink.
  • Serve hot.

Notes

For a spicier jambalaya, add more Cajun seasoning or a pinch of cayenne pepper.
