Instructions
Preparation Steps
Set the Instant Pot to sauté mode. Add the sausage and cook until browned.
Add the chicken and cook until browned.
Stir in the rice, tomatoes, chicken broth, Cajun seasoning, salt, and pepper.
Close the lid and set the valve to sealing. Cook on high pressure for 8 minutes.
Allow the pressure to release naturally for 10 minutes, then carefully quick release any remaining pressure.
Stir in the shrimp and cook until pink.
Serve hot.
Notes
For a spicier jambalaya, add more Cajun seasoning or a pinch of cayenne pepper.
