Instant Pot Chicken Adobo

  • 2.5 pounds chicken thighs bone-in, skin-on
  • 0.5 cup soy sauce low sodium preferred
  • 0.25 cup white vinegar Ensure it's white vinegar for authentic taste
  • 6 cloves garlic minced
  • 2 pieces bay leaves
  • 1 teaspoon black peppercorns

Preparation Steps

  • Place the chicken thighs in the Instant Pot.
  • Add soy sauce, vinegar, garlic, bay leaves, and peppercorns to the pot.
  • Lock the lid and select 'Pressure Cook'. Set the timer to 9 minutes.
  • Allow pressure to release naturally for 5 minutes, then do a quick release.
  • Remove the lid and transfer the chicken to a serving dish. Stir the remaining sauce and pour over the chicken before serving.

Notes

For an extra savory kick, simmer the sauce for an additional 5 minutes using the 'Saute' function after pressure cooking.
