Instructions
Preparation Steps
Place the chicken thighs in the Instant Pot.
Add soy sauce, vinegar, garlic, bay leaves, and peppercorns to the pot.
Lock the lid and select 'Pressure Cook'. Set the timer to 9 minutes.
Allow pressure to release naturally for 5 minutes, then do a quick release.
Remove the lid and transfer the chicken to a serving dish. Stir the remaining sauce and pour over the chicken before serving.
Notes
For an extra savory kick, simmer the sauce for an additional 5 minutes using the 'Saute' function after pressure cooking.
