This Instant Pot Blueberry Cobbler is a quick and delicious dessert perfect for any occasion. Sweet blueberries topped with a buttery, crisp topping baked to perfection.

  • 2 cups fresh blueberries Can use frozen blueberries, do not thaw.
  • 1 cup all-purpose flour
  • 0.5 cup granulated sugar Adjust to taste
  • 0.25 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 cup milk whole milk recommended

Preparation Steps

  • In a large bowl, combine flour, sugar, and baking powder.
  • Add milk, melted butter, and vanilla extract to dry ingredients. Stir until well combined.
  • Spread blueberries in the bottom of the Instant Pot. Pour batter evenly over blueberries.
  • Seal the Instant Pot lid and set to cook on high pressure for 25 minutes.
  • Allow natural release for 10 minutes before opening the lid. Serve warm.

Notes

For extra flavor, serve with vanilla ice cream or whipped cream.
