Icebox Cake Recipe

This classic Icebox Cake recipe is a delicious and easy dessert that layers cookies and cream to create a delightful treat.

  • 2 cups heavy cream cold
  • 1 cup powdered sugar sifted
  • 1 teaspoon vanilla extract
  • 16 ounces chocolate wafer cookies approximately 2 packages

Preparation Steps

  • In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • On a large platter, spread a small amount of whipped cream mixture, then layer cookies in a single layer, placing them edge to edge, covering the whipped cream.
  • Spread a thin layer of whipped cream over the cookies. Repeat layering with remaining cookies and whipped cream, finishing with a layer of whipped cream on top.
  • Refrigerate for at least 4 hours or overnight before serving to allow cookies to soften.

Notes

For a variation, try adding layers of fruit or chocolate shavings between the cookie layers.
