Healthy Banana Bread

This is a delicious and healthy banana bread recipe that uses whole wheat flour and natural sweeteners. It's moist, tender, and packed with banana flavor.

  • 3 large ripe bananas mashed
  • 0.5 cup melted coconut oil
  • 0.5 cup maple syrup
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, mash the ripe bananas. Add the melted coconut oil, maple syrup, eggs, and vanilla extract. Whisk until well combined.
  • In a separate bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. This banana bread also freezes well.
