  • 1 cup beef broth
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

  • Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the diced potatoes to the skillet. Pour in the beef broth, ketchup, and Worcestershire sauce. Season with salt and pepper.
  • Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 25-30 minutes, or until the potatoes are tender and the liquid has slightly thickened. Stir occasionally.
  • Serve hot, garnished with fresh parsley if desired.

Notes

This recipe is very versatile. You can add other vegetables like carrots or peas, or use different seasonings to suit your taste. It's also great served with a dollop of sour cream.
