  • 1 cups granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cups grape soda
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together grape soda, oil, eggs, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fill cupcake liners about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

These cupcakes are best enjoyed fresh. Store leftovers in an airtight container at room temperature.
