Preparation Steps
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the ginger and cinnamon.
Divide the dough in half, flatten into discs, wrap in plastic wrap, and chill for at least 30 minutes.
Preheat oven to 350°F (175°C). Roll out the dough on a lightly floured surface and cut out gingerbread man shapes.
Place cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until the edges are lightly golden.
Let the cookies cool completely on a wire rack before decorating with royal icing.
