Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  • In a bowl, whisk together the flour, sugar, and baking powder. Set aside.
  • In another bowl, beat the butter until creamy. Add eggs, one at a time, mixing well after each addition.
  • Add dry ingredients to the wet mixture in thirds, alternating with milk. Mix just until combined.
  • Fold in the rainbow sprinkles until evenly distributed.
  • Spoon batter into the prepared muffin pan, filling each cup about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
