Fruit Pizza

A delightful and colorful fruit pizza with a sweet cream cheese frosting and a sugar cookie crust. Perfect for parties and a fun dessert for the whole family!

Ingredients
  

Cookie Crust

  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Toppings

  • 3 cups fresh fruit sliced or berries (e.g., strawberries, blueberries, kiwi, mandarin oranges, raspberries)

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 12-inch pizza pan or a round baking sheet.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • Beat in the egg and vanilla extract until well combined.

  • In a separate bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Press the cookie dough evenly onto the prepared pizza pan to form a crust.
  • Bake for 12-15 minutes, or until the edges are lightly golden brown.
  • Let the crust cool completely on the pan.
  • While the crust cools, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.

  • Beat in the powdered sugar and vanilla extract until well combined and fluffy.

  • Spread the cream cheese frosting evenly over the cooled cookie crust.
  • Arrange the fresh fruit over the frosting to create your desired design.

  • Chill the fruit pizza for at least 30 minutes before slicing and serving.

Notes

For best results, use a variety of colorful fruits. You can also add a light glaze of apricot jam (warmed and strained) over the fruit for extra shine.
