Flourless Chocolate Cake

  • 170 grams dark chocolate (70% cacao) chopped
  • 175 grams granulated sugar
  • 6 large eggs
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
  • Melt the butter and dark chocolate together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat.

  • In a separate large bowl, whisk together the granulated sugar, eggs, cocoa powder, vanilla extract, and salt until well combined.

  • Gradually whisk the melted chocolate mixture into the egg mixture until smooth and fully incorporated.
  • Pour the batter into the prepared springform pan and spread evenly.
  • Bake for 30-35 minutes, or until the edges are set and the center is still slightly soft.
  • Let the cake cool in the pan for about 15 minutes before removing the sides of the springform pan. Allow to cool completely on a wire rack.

Notes

Serve at room temperature or slightly chilled. Dust with cocoa powder or serve with fresh berries and whipped cream for an extra touch.
