Feta Tomato Soup

A flavorful and comforting soup made with fresh tomatoes, feta cheese, and herbs.

  • 2 lbs Ripe Tomatoes
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 4 oz Feta Cheese crumbled
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Dried Oregano
  • 0.25 teaspoon Red Pepper Flakes optional
  • 1 tablespoon Fresh Basil chopped, for garnish
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Add the tomatoes, vegetable broth, oregano, red pepper flakes (if using), salt, and pepper to the pot. Bring to a simmer.
  • Cook for 20 minutes, or until the tomatoes have softened and the flavors have melded.
  • Remove from heat and use an immersion blender to blend the soup until smooth, or carefully transfer to a regular blender.
  • Stir in the crumbled feta cheese.
  • Serve hot, garnished with fresh basil.

Notes

Serve with a side of crusty bread for dipping!
