Easy White Chocolate Peanut Butter Clusters

These no-bake White Chocolate Peanut Butter Cookie Clusters are a quick and easy treat, perfect for satisfying your sweet tooth. They're a delicious combination of white chocolate, peanut butter, crispy rice cereal, peanuts, and marshmallows.

  • 16 oz Vanilla Candiquik, chopped (or white chocolate chips)
  • 0.5 cup Creamy peanut butter (do not use natural)
  • 1 cup Rice Krispies cereal
  • 1 cup Peanuts
  • 1 cup Miniature marshmallows

Preparation Steps

  • Line two baking sheets with parchment paper; set aside.
  • In a large microwave-safe bowl, combine Candiquik and peanut butter. Microwave on high for 1 minute, then stir. If needed, heat in 15-second intervals until smooth, being careful not to overheat.
  • Add cereal, peanuts, and marshmallows to the melted white chocolate-peanut butter mixture. Stir to coat.
  • Drop mounds onto prepared baking sheets using a 2-tablespoon cookie scoop or a spoon. Let them firm up for about 2 hours at room temperature, or expedite by refrigerating or freezing.

Notes

Store in an airtight container at room temperature for at least 2 weeks, in the refrigerator for at least 1 month, or in the freezer for at least 6 months.
