Instructions
Preparation Steps
Season chicken breasts evenly on both sides with taco seasoning.
Pour ½ cup salsa and ¼ cup water into the bottom of the slow cooker and stir to combine. Place the seasoned chicken breasts on top.
Pour the remaining salsa over the chicken breasts.
Cover and cook on low for 6-8 hours or on high for 3 hours, until the chicken is fully cooked and tender.
Use two forks to shred the cooked chicken directly in the slow cooker. Mix the shredded chicken with the salsa sauce.
Cover and cook on low for an additional 30 minutes to allow sauce to thicken.
Serve the slow cooker salsa chicken in warm tortillas topped with guacamole, fresh cilantro, minced red pepper or tomato, and sour cream as desired.
Notes
For extra flavor, add a squeeze of fresh lime juice just before serving. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
