  • 2 lb chicken breast
  • 2 tbsp taco seasoning homemade or store-bought
  • 16 oz salsa
  • 0.25 cup water or chicken broth
  • corn or flour tortillas for serving
  • guacamole optional, for serving
  • fresh cilantro for garnish
  • minced red pepper or tomato optional, for garnish
  • sour cream optional, for serving

Instructions
 

Preparation Steps

  • Season chicken breasts evenly on both sides with taco seasoning.
  • Pour ½ cup salsa and ¼ cup water into the bottom of the slow cooker and stir to combine. Place the seasoned chicken breasts on top.
  • Pour the remaining salsa over the chicken breasts.
  • Cover and cook on low for 6-8 hours or on high for 3 hours, until the chicken is fully cooked and tender.
  • Use two forks to shred the cooked chicken directly in the slow cooker. Mix the shredded chicken with the salsa sauce.
  • Cover and cook on low for an additional 30 minutes to allow sauce to thicken.
  • Serve the slow cooker salsa chicken in warm tortillas topped with guacamole, fresh cilantro, minced red pepper or tomato, and sour cream as desired.

Notes

For extra flavor, add a squeeze of fresh lime juice just before serving. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
