Easy Slow Cooker Chicken and Veggies

A simple and healthy slow cooker recipe for tender chicken and colorful vegetables, perfect for a weeknight meal.

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 pound baby carrots
  • 1 pound broccoli florets
  • 0.5 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt

Preparation Steps

  • In a small bowl, mix together olive oil, garlic powder, onion powder, black pepper, and salt.
  • Place chicken breasts in the bottom of your slow cooker.
  • Pour the chicken broth over the chicken.
  • Arrange the baby carrots around the chicken.
  • Sprinkle the seasoning mixture over the chicken and carrots.
  • Cover and cook on low for 4 hours or on high for 2-3 hours, or until chicken is cooked through.
  • During the last 30 minutes of cooking, add the broccoli florets to the slow cooker.
  • Cover and continue to cook until broccoli is tender-crisp.
  • Remove chicken from slow cooker, shred it with two forks, and return it to the pot. Stir to combine with vegetables.
  • Serve hot.

Notes

This recipe is very adaptable. Feel free to add other vegetables like bell peppers, zucchini, or sweet potatoes. For a spicier kick, add a pinch of red pepper flakes.
