In a small bowl, mix together olive oil, garlic powder, onion powder, black pepper, and salt.
Place chicken breasts in the bottom of your slow cooker.
Pour the chicken broth over the chicken.
Arrange the baby carrots around the chicken.
Sprinkle the seasoning mixture over the chicken and carrots.
Cover and cook on low for 4 hours or on high for 2-3 hours, or until chicken is cooked through.
During the last 30 minutes of cooking, add the broccoli florets to the slow cooker.
Cover and continue to cook until broccoli is tender-crisp.
Remove chicken from slow cooker, shred it with two forks, and return it to the pot. Stir to combine with vegetables.
Serve hot.
Notes
This recipe is very adaptable. Feel free to add other vegetables like bell peppers, zucchini, or sweet potatoes. For a spicier kick, add a pinch of red pepper flakes.
