These easy peanut butter cookies are a classic for a reason! Soft, chewy, and bursting with peanut butter flavor, they are perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1 cup peanut butter creamy or chunky
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

  • Beat in the eggs one at a time, then stir in the vanilla extract.

  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  • Using a fork, press down on each cookie in a crisscross pattern to flatten slightly.
  • Bake for 9-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. These cookies freeze beautifully!
