Easy Broccoli Cheddar Quiche Without Crust

This light and delicious crustless broccoli cheddar quiche is perfect for breakfast, brunch, or a light dinner. Packed with steamed broccoli and sharp cheddar cheese, it’s a low-carb, gluten-free favorite that’s easy to prepare.

  • 3 cups broccoli florets, chopped
  • 1 cup cheddar cheese, grated
  • 0.67 cups 2% milk
  • 0.25 cups half & half cream
  • 5 large eggs
  • 0.75 teaspoons kosher salt
  • 0.125 teaspoons ground black pepper
  • pinch freshly grated nutmeg
  • spray cooking spray

Preparation Steps

  • Preheat your oven to 350 degrees Fahrenheit. Spray a 9-inch pie dish with cooking spray to prevent sticking.
  • Steam the chopped broccoli florets in the microwave with 1 tablespoon water until tender crisp and green, about 2.5 to 3 minutes.
  • Evenly spread the steamed broccoli in the prepared pie dish and top evenly with the grated cheddar cheese.
  • In a mixing bowl, whisk together the 2% milk, half & half cream, eggs, kosher salt, ground black pepper, and freshly grated nutmeg until combined. Pour the custard mixture evenly over the broccoli and cheese in the dish.

  • Bake the quiche for 35 to 40 minutes, or until the center is set and the top is lightly golden. Let it cool slightly before slicing.
  • Cut the quiche into 6 slices and serve warm or at room temperature.

Notes

This crustless quiche can be customized by adding cooked sausage, mushrooms, or other vegetables. It reheats well and makes a great meal prep option for breakfast or brunch.
