  • 2 cups carrots peeled and sliced
  • 1.5 cups broccoli florets
  • 1 cup red bell pepper sliced
  • 1 tbsp olive oil extra virgin
  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the carrots, broccoli, and red bell pepper with olive oil, dried thyme, salt, and black pepper.
  • Spread the vegetables evenly on a baking sheet.
  • Bake for 35-40 minutes or until the vegetables are tender and slightly caramelized, stirring halfway through.
  • Remove from the oven and serve warm as a side dish.

Notes

For extra flavor, sprinkle with fresh parsley or grated Parmesan cheese before serving.
