Preheat oven to 375°F. Grease a 9x5 inch loaf pan.
In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Stir in 1 cup of the shredded cheddar cheese.
In another bowl, beat the softened butter and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in diced and grated apples.
Add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into the prepared loaf pan and sprinkle the remaining cheddar cheese on top.
Bake for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before removing to a wire rack to cool completely.
