In a large bowl, combine the chickpea flour, grated sweet potato, red onion, cilantro, cumin, turmeric, cayenne pepper, salt, and pepper.
Heat the olive oil in a large skillet over medium heat.
Drop spoonfuls of the mixture into the hot oil and flatten slightly.
Cook for 3-4 minutes per side, or until golden brown and crispy.
