This Creamy & Crunchy Broccoli Cauliflower Salad is a delightful combination of textures and flavors, perfect for potlucks, barbecues, or a light lunch. It's refreshing, healthy, and easy to make!
Wash the broccoli and cauliflower thoroughly. Cut them into small, bite-sized florets. Place them in a large mixing bowl.
Add the chopped red onion, shredded cheddar cheese, sunflower seeds (or walnuts), dried cranberries (or raisins), and crumbled bacon (if using) to the bowl with the broccoli and cauliflower.
In a separate small bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, sugar (or honey), and Dijon mustard until smooth. Season with salt and pepper to taste.
Pour the dressing over the vegetables and other ingredients in the large bowl. Gently toss everything together until well coated.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or preferably 1-2 hours, to allow the flavors to meld together. This also helps the broccoli and cauliflower soften slightly.
Before serving, give the salad another gentle toss. Taste and adjust seasoning if necessary. Serve chilled and enjoy!
Notes
