  • 1 pound Tortellini Cheese-filled tortellini preferred
  • 2 cups Cherry Tomatoes Halved
  • 1 cup Corn kernels Fresh or frozen
  • 1 tablespoon Olive Oil
  • 0.5 cup Fresh Basil
  • 0.25 cup Parmesan Cheese Grated

Preparation Steps

  • Cook tortellini according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine cooked tortellini, cherry tomatoes, corn kernels, olive oil, basil, and Parmesan cheese.
  • Toss gently to combine. Season with salt and pepper to taste.

Notes

For extra flavor, add a squeeze of lemon juice or a dash of red pepper flakes. Serve chilled or at room temperature.
