Crust Ingredients

  • 1.5 cups graham cracker crumbs finely crushed
  • 0.5 cup sugar
  • 0.25 cup unsweetened shredded coconut
  • 0.5 cup melted butter

Filling Ingredients

  • 32 ounces cream cheese softened
  • 1.5 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened shredded coconut
  • 2 cups heavy cream

Preparation Steps

  • Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, coconut, and melted butter. Press into the bottom of a 9-inch springform pan.
  • Beat cream cheese and sugar until smooth. Beat in vanilla extract and coconut. Gradually add heavy cream and beat until smooth.
  • Pour filling over crust. Bake for 50 minutes, or until set. Cool completely before serving.

Notes

For best results, chill the cheesecake overnight before serving. Garnish with toasted coconut flakes or whipped cream.
