Preparation Steps
Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
In a large bowl, combine flour, sugar, coconut flakes, and baking powder.
Stir in the mashed bananas, melted butter, and beaten eggs until well combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
You can add nuts such as walnuts or pecans for an extra crunch.
