Cinnamon Frosted Zucchini Bars

  • 1.5 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 cups shredded zucchini excess moisture removed
  • 0.75 cup vegetable oil
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  • Stir in the shredded zucchini, vegetable oil, beaten eggs, and vanilla extract until well combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool in the pan before frosting with desired cinnamon frosting.

Notes

These bars can be stored in an airtight container at room temperature for up to 3 days.
