Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
Cream together the butter and sugar until smooth. Beat in eggs, then add vanilla.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients and mix until just combined.
Divide dough in half. Add food coloring to one half and mix until desired color is achieved.
Roll each dough half into a rectangle. Layer them on top of each other and roll tightly.
Wrap in plastic wrap and chill for at least 30 minutes.
Slice into 1/4 inch thick rounds.
Bake for 10-12 minutes, or until edges are lightly golden.

Store cookies in an airtight container at room temperature for up to 3 days.
