Christmas Cookie Bars

These festive Christmas Cookie Bars are a delightful and easy-to-make treat, perfect for holiday gatherings and cookie exchanges. With a soft, chewy cookie base topped with creamy frosting and colorful sprinkles, they're sure to be a crowd-pleaser.

Cookie Base

  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Frosting

  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Toppings

  • 0.5 cup Christmas sprinkles

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • In a separate bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Spread the dough evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan before frosting.
  • While the bars are cooling, prepare the frosting: In a medium bowl, beat together the softened butter, powdered sugar, milk, and vanilla extract until smooth and creamy.

  • Once the bars are completely cooled, spread the frosting evenly over the top.
  • Immediately sprinkle the Christmas sprinkles over the frosting.
