Chocolate Zucchini Brownies

This is a delicious and moist brownie recipe that incorporates zucchini for added moisture and nutrition.

  • 1.5 cups zucchini shredded
  • 1 cup all-purpose flour
  • 0.5 cup cocoa powder
  • 0.75 cup sugar
  • 0.5 cup unsalted butter melted
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch baking pan.
  • In a large bowl, mix the melted butter, sugar, and vanilla extract until well combined.
  • Add the shredded zucchini and stir to combine.
  • In another bowl, combine the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan before cutting into squares.

Notes

For an extra touch, add a handful of chocolate chips before baking.
