Chocolate Zucchini Bread

A delicious way to use up summer zucchini, this moist and flavorful chocolate zucchini bread is perfect for breakfast or dessert.

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups shredded zucchini excess moisture removed
  • 0.75 cup chocolate chips

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  • In a large bowl, beat together sugar, oil, eggs, and vanilla until well combined.
  • Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in the zucchini and chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This chocolate zucchini bread is best served the next day, allowing flavors to meld.
