  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 large eggs room temperature
  • 0.5 cup peanut butter creamy
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
  • In another bowl, whisk together eggs, peanut butter, and vanilla extract until smooth.
  • Gradually add dry ingredients to wet ingredients, stirring until a dough forms.
  • Divide dough in half and shape each into a log, place on the baking sheet.
  • Bake for 25 minutes, remove from the oven, and cool for 5 minutes.
  • Slice logs into 1/2-inch thick slices, lay slices cut side down, and bake for another 10 minutes.
  • Cool completely on a wire rack before serving.

Store biscotti in an airtight container for up to two weeks.
