Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, whisk together eggs, peanut butter, and vanilla extract until smooth.
Gradually add dry ingredients to wet ingredients, stirring until a dough forms.
Divide dough in half and shape each into a log, place on the baking sheet.
Bake for 25 minutes, remove from the oven, and cool for 5 minutes.
Slice logs into 1/2-inch thick slices, lay slices cut side down, and bake for another 10 minutes.
Cool completely on a wire rack before serving.

Store biscotti in an airtight container for up to two weeks.
