Chocolate Chip Zucchini Brownies

  • 1.5 cups grated zucchini packed
  • 0.5 cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder unsweetened
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 cup chocolate chips

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the oil, sugar, and vanilla until well blended.
  • Combine the flour, cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and chocolate chips.
  • Spread the batter evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
