Chocolate Caramel Shortbread Bars

Decadent chocolate caramel shortbread bars, perfect for any occasion. A rich and buttery shortbread crust topped with a creamy caramel and a layer of dark chocolate.

  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 1 cup cold unsalted butter cubed
  • 0.5 cups packed light brown sugar
  • 1 cup caramel candies unwrapped
  • 0.5 cups heavy cream
  • 8 ounces semi-sweet chocolate chopped

Preparation Steps

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  • Whisk together flour and powdered sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  • Press the mixture into the prepared pan. Bake for 15-20 minutes, or until lightly golden.
  • Meanwhile, in a saucepan, combine caramel candies and heavy cream. Cook over low heat, stirring until smooth.
  • Pour the caramel over the baked shortbread crust. Spread evenly.
  • Melt the chocolate. Pour over the caramel layer and spread evenly.
  • Refrigerate for at least 2 hours before cutting into bars.

Notes

Store leftover bars in an airtight container in the refrigerator.
