  • 1 cup dried pinto beans rinsed
  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon chipotle powder
  • 1 tablespoon olive oil
  • 1 small onion chopped

Preparation Steps

  • Combine pinto beans, water, and salt in a pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until beans are tender.
  • Heat olive oil in a pan. Add chopped onion and cook until softened. Stir in chipotle powder.
  • Add the onion mixture to the cooked beans. Simmer for an additional 15 minutes.
