Preparation Steps
Combine pinto beans, water, and salt in a pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until beans are tender.
Heat olive oil in a pan. Add chopped onion and cook until softened. Stir in chipotle powder.
Add the onion mixture to the cooked beans. Simmer for an additional 15 minutes.
