Instructions
Preparation Steps
In a large pot, combine chicken broth, rice, onion, garlic, carrots, celery, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is almost cooked.
Add the chicken and cook for an additional 15-20 minutes, or until the chicken is cooked through.
Serve hot.
Notes
For extra flavor, add a bay leaf during cooking. You can also add other vegetables like peas or green beans.
