  • 1 cup uncooked long-grain rice
  • 8 cups chicken broth
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper

Preparation Steps

  • In a large pot, combine chicken broth, rice, onion, garlic, carrots, celery, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is almost cooked.
  • Add the chicken and cook for an additional 15-20 minutes, or until the chicken is cooked through.
  • Serve hot.

Notes

For extra flavor, add a bay leaf during cooking. You can also add other vegetables like peas or green beans.
